This week has been our back-to-school week and since we are back in school and back to making school lunches, I thought I would share one of our favorite lunch box cookie recipes, Chocolate Oat Delights. My youngest two kids helped me make these yesterday and I was reminded how easy they are. They are also a gluten, nut and egg free option if you make sure the oats are GF.
They also happen to resemble a certain local animal excrement and therefore my (almost) 8yr old boy dubbed them “Bear Plop cookies”. Regardless of what they look like, they are super yummy, chocolatey, goodness, especially accompanied by a glass of milk!
Chocolate Oat Delights
2 cups sugar
6 tbsp cocoa
1/2 cup butter
1/2 cup milk
1/2 tsp vanilla
1 cup shredded unsweetened coconut
3 cups oats (any type works but I used old fashioned rolled oats)
Melt butter in saucepan and then add sugar, cocoa and milk. Bring to a boil. Boil for about 1 1/2 minutes. Add vanilla. Remove from heat and stir in coconut and oats. Drop by teaspoonfuls onto wax paper; chill.
Makes 4 1/2 dozen
