Chocolate Oat Delights (or as my family calls them, Bear Plop cookies)

This week has been our back-to-school week and since we are back in school and back to making school lunches, I thought I would share one of our favorite lunch box cookie recipes, Chocolate Oat Delights. My youngest two kids helped me make these yesterday and I was reminded how easy they are. They are also a gluten, nut and egg free option if you make sure the oats are GF.

They also happen to resemble a certain local animal excrement and therefore my (almost) 8yr old boy dubbed them “Bear Plop cookies”. ┬áRegardless of what they look like, they are super yummy, chocolatey, goodness, especially accompanied by a glass of milk!

Chocolate Oat Delights

2 cups sugar

6 tbsp cocoa

1/2 cup butter

1/2 cup milk

1/2 tsp vanilla

1 cup shredded unsweetened coconut

3 cups oats (any type works but I used old fashioned rolled oats)

Melt butter in saucepan and then add sugar, cocoa and milk. Bring to a boil. Boil for about 1 1/2 minutes. Add vanilla. Remove from heat and stir in coconut and oats. Drop by teaspoonfuls onto wax paper; chill.

Makes 4 1/2 dozen
