Easy Sweet Cinnamon Pumpkin Seeds

This year, when making your Halloween Jack o’ lanterns, save the seeds and make easy sweet cinnamon pumpkin seeds! In this article, I’ll explain how you can separate the seeds from the goo and make a sweet snack. That’s right, you might have to get your hands a little gooey! Did you know that pumpkin seeds also have lots of nutritional benefits? I’m going to tell you all about that as well.

Nutritional Benefits of Pumpkin Seeds

Pumpkin seeds contain a wide variety of antioxidant phytonutrients. They also contain health-supportive phytosterols, including beta-sitosterol, sitostanol and avenasterol (The management of cholesterol levels is the most common reason for taking phytosterol. Additional health benefits of phytosterols include the support of prostate health, hair growth and antioxidant activity).

Pumpkin seeds are a very good source of phosphorus, magnesium, manganese and copper. They are also a good source of other minerals including zinc and iron. In addition, pumpkin seeds are a good source of protein.

But enough of the healthy stuff, lets get to the yummy part!

Sweet Cinnamon Pumpkin Seeds

Super easy to make this fun little treat cinnamon pumpkin seeds.

Ingredients:

4 cups pumpkin seeds
1/2 cup butter
2 tbsp. brown sugar
1 tbsp. ground cinnamon
1/4 tsp. salt
1/4 cup granulated sugar

Directions:

Preheat oven to 350 degrees.

In a microwave safe bowl, melt the butter. Add the pumpkin seeds, brown sugar, cinnamon and salt. Stir to coat the seeds.

Cover a cookie sheet with parchment paper. Spread the seed mix evenly and thin to allow seeds to cook evenly.

Bake for 30 minutes, stirring once after 15 minutes.

Remove from oven and sprinkle 1/2 of the granulated sugar over the seeds; stir to coat. Return to oven and bake for 15 minutes more.

Sprinkle with remaining sugar, stir and bake for a final 15 minutes. Let cool and enjoy!

How do I use fresh pumpkin seeds?

Well, it’s pretty simple, you just scrape all the gunk and guts out of a pumpkin and put them in a bowl or colander. Next you want to separate the seeds from the pumpkin guts as much as possible and then rinse the seeds under cold water. Last, you lay a tea towel on the counter and lay the pumpkin seeds out on it to dry. Carry on to the sweet cinnamon pumpkin seeds recipe!
